Zucchini Bread

This Zucchini Bread delivers loads of flavor that everyone will enjoy, try this one!

1 1/2 cups all purpose flour

3/4 cup sugar

2 1/4 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. salt

1/3 cup vegetable oil

2 large eggs

1 1/2 cups shredded zucchini (1 medium)

1/2 cup walnuts, chopped

1/2 tsp. freshly grated orange peel

Preheat oven to 350 degrees. Grease an 8 x 4 inch metal loaf pan.

In a large bowl, using a wire whisk, whisk flour, sugar, baking powder, cinnamon and salt.

In a medium bowl using a fork, mix eggs, oil, zucchini, walnuts and orange peel.

Stir zucchini mixture into flour mixture just until flour is moistened.

Pour batter into prepared pan. Bake about 1 hour and 10 minutes or until a toothpick inserted into center comes out clean.

Cool in pan on wire rack for 10 minutes.

Remove from pan and cool completely on wire rack.

Makes 1 loaf, 12 slices
