Whole Wheat Bar Cookies

These Whole Wheat Bar Cookies will surprise you with chocolate and nuts and a wonderful coffee glaze!

2 cups all-purpose flour

1 cup whole wheat flour

1 tsp. baking soda

1 tsp. salt

2 eggs

2 cups brown sugar

1 cup oil

2 tsp. vanilla

2 tsp. instant coffee

1 cup cold water

1 cup semisweet chocolate chips

1 cup chopped walnuts

Stir together flours, soda, salt.

In large bowl, beat eggs until light and fluffy. Gradually add brown sugar, oil and vanilla. Beat well.

Dissolve coffee in cold water. Gradually stir in egg mixture.

Add dry ingredients, beat until well combined.

Pour batter into a greased 15 x 10 x 1 inch baking pan.

Sprinkle chocolate chips and nuts evenly on top.

Bake in a 350 degree oven for 25-30 minutes. Cool slightly. Drizzle with coffee glaze.

Coffee Glaze: Dissolve 1/2 tsp. instant coffee in 4 tsp. water. Combine 1 cup powdered sugar, 1 Tbsp. softened butter and mix until smooth
