White Christmas Pie

White Christmas Pie is one recipe you will want to make time and time again, make it a new tradition for your Christmas celebration!

Flaky Pie Crust recipe

Filling:

1 envelope unflavored gelatin

1/4 cup water

2/3 cup granulated sugar, divided

1/4 cup all purpose flour

1/2 tsp. salt

1 1/2 cups whole milk

1/4 tsp. almond extract

1/4 tsp. vanilla extract

1/2 cup heavy cream

3 egg whites

1/4 tsp. cream of tartar

3/4 cup shredded coconut +more for sprinkling over top

2 cups heavy cream

2 cups fresh diced strawberries

1/2 cup powdered sugar

Prepare Flaky Pie Crust recipe. Set crust aside to cool.

To prepare Filling: Place gelatin in water in a small bowl to dissolve. Set aside.

In a medium saucepan, mix 1/3 cup of granulated sugar, flour and salt. Add milk and whisk to combine. Over medium heat, bring to a boil and cook for one minute.

Add gelatin mixture and whisk to combine, then remove from heat. Whisk in both extracts and place pan in a bowl of ice to quickly cool.

Beat 1/2 cup of heavy cream to soft peaks and set aside.

Beat egg whites with cream of tartar and the remaining granulated sugar to stiff peaks. Set aside.

Place the filling into a mixer bowl and whip just to make the mixture creamy.

In a large bowl, add the cooled whipped filling and gently fold in the whipped cream, beaten egg whites and shredded coconut. Using a rubber spatula, scrape the mixture evenly into baked and cooled pie shell.

Whip two cups of heavy cream until stiff peaks form. Put in a large pastry bag with a large star tip. Pipe decorative top over the top of filling and sprinkle with coconut over the top.

Dice the strawberries and mix with powdered sugar in a bowl.

Cut and serve pieces of pie with strawberry sauce spooned over the top.

Serves 8-10
