Valentine’s Day Trail Mix

Give this Valentine’s Day Trail Mix a try for a little healthier snack!

1 cup granola

1 cup salted pretzel sticks, coarsely crushed

1 cup semisweet chocolate pieces

1 1/2 cups dried cranberries

1 cup cocoa-covered almonds

1 cup dried cherries

1/2 cup freeze-dried raspberries 

Line two baking sheets with waxed paper, set aside.

In a small bowl, place granola. In another small bowl place pretzels.

In a 2 cup glass measuring cup, place 2/3 cup of chocolate pieces. Microwave for 30 seconds. Stir, continue microwaving in 10 second increments until melted, stirring after each heating. Stir until smooth. Add remaining 1/3 cup chocolate pieces and stir until smooth again.

Pour half of the melted chocolate over the granola and the other half over the pretzels. Stir each until evenly coated.

Place contents of each bowl onto prepared baking sheets.

Separate the chocolate-coated pieces into small chunks. Let stand at room temperature 1-2 hours or until set.

If necessary, chill 15 minutes for chocolate to set.

Break or chop the chocolate coated granola and pretzels in bite-sized morsels.

Transfer pieces to a large bowl. Add cranberries, almonds and dried cherries. Stir in dried raspberries just before serving.

Keep in an airtight container at room temperature for 3 days.
