Turkey Hash

This Turkey Hash makes a quick, tasty meal to serve at dinner time! Also can be made with chicken.

3 Tbsp butter

1/2 cup onion

1 tsp. rosemary

2 cups cubed cooked turkey or chicken

2 cups cubed cooked potatoes

1 cup turkey gravy or heavy cream or mixture of both

salt & freshly ground black pepper to taste

1 Tbsp. finely chopped parsley

Heat butter in a large skillet until foaming. Add onion and rosemary and cook until the onion is soft. Add turkey and potatoes, stir well and cook 3-4  minutes, pressing down with a spatula to form a flat cake. Lower the heat to medium-low and pour in the gravy or cream or both. Sprinkle with salt and pepper. Cook for 5 minutes more. Turn out onto a serving platter and sprinkle with parsley.
