Texas Tornado Cake

This Texas Tornado Cake recipe is quick and easy to prepare with ingredients you usually have on hand. Make it for unexpected guests, it will be a big hit!

1 1/2 cups sugar

2 eggs

2 cups fruit cocktail with juice

2 tsp. baking soda

2 cups all-purpose flour

1/4 cup packed brown sugar

1 cup walnuts

Grease and flour a 9 x 13 cake pan. Preheat oven to 325 degrees.

Mix together sugar, eggs, fruit cocktail, soda and flour.

Pour batter into prepared pan.

Mix brown sugar and nuts together and sprinkle mixture over cake batter.

Bake 40 minutes. Cool very slightly and frost with icing recipe below.

Icing:

1/2 cup butter

3/4 cup sugar

1/2 cup evaporated milk

1 cup flaked coconut

Boil sugar, butter and milk for 2 minutes. Add coconut. Spread icing on cake while icing and cake are hot.

    My mom use to make this cake very often for extended family get together. Folks raced through their meal to make sure they got a piece of this cake for dessert. I had forgotten about it until recently. Must make soon. It is moist and not too sweet, yet very flavorful.
