Teriyaki Beef Casserole

Teriyaki Beef Casserole will make a tasty meal to serve your family for dinner, plus its simple!

3-4 lbs. flank steak

2 cups stir fry vegetables (snow peas, broccoli, etc.), steamed

Fried Rice:

1 egg

1 1/2 cups peas & carrots steam in a the bag

1/4 tsp. sugar

1/8 tsp. ground ginger

1 pinch crushed red pepper

1 Tbsp. oil

3 Tbsp. soy sauce

1/2 Tbsp. brown sugar

2 cups cooked rice

Teriyaki Sauce Recipe

Make the teriyaki sauce recipe.

Place 3/4 cup in a zip lock baggie with the flank steak and place in the freezer.

Heat a small skillet over medium heat add a dash of oil.

Whisk the egg in a bowl and put in skillet and scramble. Set aside.

Place oil in a large skillet, add the rice, stirring occasionally for 3 minutes.

Steam vegetables to crisp tender.

In a small dish, whisk together the soy sauce, brown sugar, white sugar, ginger and red pepper. Pour into rice and stir to coat. Add the vegetables and eggs, stir to combine.

Transfer to a 9 x 13 inch baking dish and set aside.

Remove the meat from the freezer and slice thin.

Heat the skillet to medium high heat, add a little oil and once hot add the steak, cook 3-5 minutes. Add to the baking dish with the rice and steamed vegetables.

Drizzle with teriyaki sauce all over dish and toss to coat.

Bake in a 350 degree oven for 20-25 minutes. Drizzle with more teriyaki sauce if desired.
