Tamale Pot Pie

This delicious Tamale Pot Pie is not your typical pot pie! Try this one for dinner tonight.

1 lb. lean ground beef

2 cups frozen corn, thawed

1 14.5 oz. diced tomatoes

1 2 1/4 oz. can sliced ripe olives, drained

1 cup + 2 Tbsp. biscuit baking mix, divided

1 Tbsp. chili powder

2 tsp. ground cumin

1/2 tsp. salt

1/2 cup cornmeal

1/2 cup milk

2 Tbsp. chopped green chilies

1 egg, beaten

Cook ground beef in a large skillet over medium heat until browned, drain.

Stir in corn, tomatoes with juice, olives, 2 Tbsp. baking mix, chili powder, cumin and salt.

Bring to a boil. Boil, stirring frequently, one minute. Keep warm over low heat.

Stir together remaining baking mix and remaining ingredients until blended.

Pour beef mixture into an ungreased 9 x 9 inch baking pan.

Spread cornmeal mixture over beef mixture.

Bake, uncovered, at 400 degrees for 20-30 minutes or until golden.

Serve with a Creamy Fruit Salad.
