Taco Spaghetti

This Taco Spaghetti is a one-pot meal to make for a delicious, quick meal for dinner tonight!

1 Tbsp. olive oil

1 lb. lean ground beef

1 package taco seasoning or make your own

1 10 oz. can Rotel Mild Diced Tomatoes & Green chilies

1 Tbsp. tomato paste

8 oz. spaghetti

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

2 Tbsp. chopped fresh cilantro leaves

Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and cook, stirring until beef has browned and crumbled, about 3-5 minutes. Drain any fat and add the taco seasoning.

Stir in diced tomatoes, tomato paste, spaghetti and 3 cups of water. Bring to a boil. Cover and reduce heat to simmer. Cook until pasta is cooked, about 13-16 minutes.

Remove from heat and top with cheeses. Cover about 2 minutes or until cheese is melted.

Garnish with tomato and cilantro, if desired.
