Sweet Potato Cinnamon Roll Cake

This Sweet Potato Cinnamon Roll Cake is full of flavor using sweet potatoes, cinnamon roll topping and a vanilla glaze to top it off!

Cake:

3 cups all-purpose flour

1/2 tsp. nutmeg

1/4 tsp. salt

1 cup sugar

4 tsp. baking powder

2 cups cooked sweet potatoes

1 1/2 cups milk

2 eggs, beaten

2 tsp. vanilla extract

1/2 cup butter, melted

Topping:

1 cup butter, softened

1 cup brown sugar

2 Tbsp. flour

1 Tbsp. cinnamon

Glaze:

2 cups powdered sugar

5 Tbsp. milk

1 tsp. vanilla extract

1 cup chopped pecans, optional

Preheat oven to 350 degrees. Grease a 9 x 13 inch baking pan.

To prepare cake: In a large bowl, combine flour, sugar, salt and baking powder. Stir with a fork to combine. In another large bowl, beat sweet potatoes and milk until smooth. Add the eggs, nutmeg and vanilla, beat until combined. Slowly add the flour mixture to the sweet potato mixture, mixing just to incorporate. Slowly stir in the melted butter until well combined. Pour batter into the prepared pan.

To make the topping: Mix all the topping ingredients together until well mixed. Drop evenly over batter and swirl with a knife. Bake 30-35 minutes. Cool slightly and glaze.

To prepare glaze: Combine all glaze ingredients until smooth. Pour over the cake while still warm.
