Strawberry Pudding Cheesecake Cookies

Strawberry Pudding Cheesecake Cookies are creamy strawberry cookies with a delicious cheesecake filling. These cookies are great to take to picnics, potlucks or just a special treat at home!

1 package super moist strawberry cake mix

2 eggs

1/2 cup vegetable oil

3.4 oz. package strawberry or vanilla instant pudding

Cheesecake filling:

4 oz. cream cheese, softened

2 Tbsp. butter, softened

1/2 tsp. vanilla extract

dash of salt

2 cups powdered sugar, sifted

Preheat oven to 350 degrees.

In a mixing bowl, combine cake mix, instant pudding mix, eggs and vegetable oil. Mix and then knead with your hands to form a dough. Cover and place in the refrigerator until ready to use.

To prepare cheesecake filling: Combine cream cheese, butter, vanilla and powdered sugar. Using a mixer, combine until thick and creamy. Spoon out 1 teaspoon and roll into a ball, place on a parchment lined baking sheet, continue with all the filling. Put into freezer for 2 hours to set.

When the cheesecake filling is ready, prepare the cookies.

Scoop out 1-2 tablespoons of cookie dough. Roll into balls then flatten into a circle. Fill with the cream cheese balls, then roll it up into a ball.

Place on a lined baking sheet and bake for 8-12 minutes. Depending on size of cookies. The tops won’t brown, but the bottoms will. Immediately after you take them from the oven, press them down to form a round cookie.

Makes 12-18 cookies
