Stir-Fried Beef with Ginger Broccoli

Fix this healthy Stir-Fried Beef with Ginger Broccoli for a delicious meal for dinner tonight!

2 lbs. lean beef sirloin or flank steak

1 1/2 tbsp. vegetable oil

2 tsp. peeled and finely minced fresh ginger

2 minced garlic cloves

2 Tbsp. minced scallions

1 1/2 Tbsp. vegetables oil

2 cups broccoli florets

2 cups sliced brown or white mushrooms

1 red bell pepper, cut into strips

1/2 cup beef stock

1 Tbsp. cornstarch

1 Tbsp. dry sherry

1-2 Tbsp. low-sodium tamari soy sauce, to taste

1/4 tsp. hot-pepper flakes

Slice beef across the grain into thin strips. Set aside.

In a large nonstick skillet, heat 1-1/2 Tbsp. oil over high heat. When oil is hot, add ginger and garlic and stir-fry 30 seconds. Add scallions and beef strips and stir-fry 2 minutes. Remove from pan and set aside.

Heat remaining 1-1/2 Tbsp. oil over high heat. When oil is hot add broccoli, mushrooms and bell pepper and quickly stir-fry to coat with oil. Add stock and cook over high heat until boiling.

Cover, reduce heat to medium and steam until vegetables are barely tender, about 5 minutes.

Return beef mixture to skillet. While vegetables are steaming, mix cornstarch, sherry, soy sauce and hot-pepper flakes in a small bowl, using a fork.

Stir cornstarch mixture into beef mixture and cook over medium heat until thickened and heated through.

Taste, and adjust seasonings. Serve immediately.
