Spinach & Cheese Stuffed Chicken Breasts

Spinach & Cheese Stuffed Chicken Breasts make an amazing entree to serve anytime!

6 5 oz. skinless, boneless chicken breasts

1/4 cup oil

2 Tbsp. dried thyme, crushed

2 Tbsp. butter

1/4 cup sweet onion, diced

10 oz. package frozen spinach, thawed & drained

1/4 cup cottage cheese

1/4 cup Parmesan cheese, grated

1/2 tsp. basil

Place chicken breasts between 2 sheets of plastic wrap and flatten to 1/4 inch thickness using a rolling pin or flat side of a meat mallet.

Brush chicken breasts with oil, sprinkle with thyme and set aside.

Melt butter in a saucepan over medium heat and saute onion until tender. Remove from heat and set aside.

Combine spinach in a large bowl with cottage cheese, Parmesan cheese and basil.

Stir in sauteed onions and mix well.

Place a portion of spinach mixture in center of each chicken breast and bring sides to center, overlapping.

Secure with metal skewers and bake, uncovered, at 375 degrees for 30 minutes.

Remove skewers before serving.

Serve with Mushroom Rice for a delicious meal.
