Smothered Scalloped Pork & Potatoes

Smothered Scalloped Pork & Potatoes will make a very tasty meal at dinner or a special Sunday meal!

6 boneless thick cut loin pork chops

2 1/2 Tbsp. paprika

1 Tbsp. salt

1 Tbsp. garlic powder

1 Tbsp. black pepper

2 Tbsp. onion powder

1 Tbsp. dried oregano

1 Tbsp. dried thyme

1 Tbsp. adobo

1 large onion, sliced

2 garlic cloves, minced

4 Tbsp. butter

4 cups potatoes, sliced very thin

1 can (10.75 oz.) cream of mushroom soup

1 1/4 cups milk

1 cup sliced fresh mushrooms

Preheat oven to 350 degrees.

Mix together paprika, salt, garlic powder, black pepper, onion powder, dried oregano, thyme and adobo. Season and coat pork chops with spice mix. Butter a 2-quart baking dish.  Set aside.

Heat a large skillet over medium-high heat, melt 2 Tbsp. of butter and add minced garlic, saute 30 seconds. Add seasoned pork chops. Brown on both sides, remove and set aside.

Add remaining 2 Tbsp. of butter to the skillet, add sliced onion, saute until soft.  Add sliced mushrooms, saute to slightly brown. Add mushroom soup and gradually stir in milk. Set aside.

Slice potatoes and place evenly in prepared baking dish. Place pork chops on top of potatoes. Pour soup mixture over the chops.

Cover and bake 30 minutes. Remove the cover and bake an additional 40 minutes.

Sprinkle lightly with parsley and serve.
