Slow Cooker Chicken Alfredo

Slow Cooker Chicken Alfredo will make a delicious dinner tonight!

2 large chicken breasts (1 lb.)

1 1/2 cups heavy cream

2 cups low sodium chicken broth

2 Tbsp. olive oil

2 cups finely shredded Parmesan cheese

1/2 lb. uncooked penne pasta

1/4 to 1/2 cup hot water

kosher salt and black pepper

Add chicken breast, heavy cream, chicken broth, olive oil and one tsp. salt to slow cooker.

Cook on low 4 hours, until chicken has reached 165 degrees internal temperature.

Remove chicken from slow cooker, set aside to cool and shred.

Stir 1/4 cup of hot water and penne pasta, cover and cook on high 30 minutes. Just until pasta is tender.

Stir in Parmesan cheese, shredded chicken and additional salt and pepper to taste.

If sauce is to thick, use additional hot water to thin to desired consistency.
