Skillet Pork Lo Mein

Angel hair pasta makes a great stand in for Asian noodles, and frozen vegetables takes the work out of prepping the veggies. Try this quick Skillet Pork Lo Mein dinner on a busy week night.

8 oz. angel hair pasta

1 lb. pork tenderloin

1 lb. bag frozen stir-fried vegetables

1 cup teriyaki sauce

1/4 tsp. ginger

Cook pasta as directed on package. Drain and set aside.

While pasta is cooking, cut pork tenderloin into bite-sized pieces.

Heat a large nonstick skillet over medium-high heat. Add pork and cook for 3 minutes, stirring frequently. Stir in frozen vegetables, teriyaki sauce and ginger. Continue to cook until it starts to boil. Reduce heat to medium-low, cover and simmer about 5 minutes or until pork is done and vegetables are tender.

Stir in cooked pasta and gently mix until noodles are coated with sauce. Cook a few more minutes until heated through. Serve with Homemade Egg Rolls, if desired.
