Skillet Pecan Rice

This Skillet Pecan Rice has a wonderful flavor, the pecans add texture and a depth of flavor like no other nut could, mixed with bell pepper, onion and garlic!

2 3.5 oz. bags quick-cooking rice

1/2 medium size red bell pepper, chopped

1/2 small onion, chopped

1 cup sliced fresh mushrooms

2 Tbsp. vegetable oil

1 clove garlic, minced

1 tsp. Cajun seasoning

1/4 tsp. salt

1/2 tsp. freshly ground black pepper

3 Tbsp. chopped pecans, toasted

Cook rice according to package directions.

Saute chopped bell pepper, chopped onion, and sliced mushrooms in hot vegetable oil in a large nonstick skillet over medium-high heat 5 minutes or until tender. Add garlic, saute for 2 minutes.

Stir in cooked rice, Cajun seasoning, salt and pepper, sprinkle with toasted pecans.

Serve immediately.
