Simple Winter Squash Soup

This Simple Winter Squash Soup will warm you through on those cold winter evenings!

2 cups cooked winter squash

3 cups milk

3 Tbsp. grated onion

1/2 tsp. grated fresh ginger

salt to taste

3 Tbsp. butter

Put squash through a strainer. Mix squash, milk, onion and ginger in a medium stock pot and cook over medium heat for about 10 minutes.

Season with salt. If soup is to thick, thin with more milk, water or stock.

Stir in the butter just before serving.

Serve with Grilled Roast Beef Sandwiches for a complete meal.

Yield: 5 cups
