Simple Chocolate Truffles

Simple Chocolate Truffles will make a great last minute gift idea for any occasion!

1 lb. bittersweet chocolate, finely chopped

1 cup heavy cream

best quality cocoa powder

Place the chocolate in a large heat proof bowl.

Bring cream just to a boil over medium-high heat, pour directly over chopped chocolate.

Allow to sit 10 minutes, use a rubber spatula to gently stir chocolate and cream until combined.

Let sit at room temperature until thickened, about 15 minutes.

Pour the mixture into a shallow 8 inch square glass baking dish or pie plate.

Cover with plastic wrap, and refrigerate until the mixture is very cold and set but still pliable, about 30 minutes.

Using a teaspoon, scoop out chocolate mixture into 1 inch nuggets, transfer to a parchment-lined baking sheet. Chill 10 minutes.

Use your fingertips to mold truffles into round shapes.

Roll in cocoa powder to coat, chill in an airtight container until ready to serve.

Truffles can be stored in an airtight container in the refrigerator up to 2 weeks.
