Shrimp Butter

This Shrimp Butter can be pureed or left chunky, either way it is delicious!

1 cup butter, at room temperature

1 Tbsp. sherry

1/2 tsp. lemon zest

1/2 tsp. salt

1/4 tsp. black pepper

1/2 tsp. garlic powder

juice of 1/2 lemon

cayenne pepper to taste

2 3 oz. packages cream cheese, softened

2 Tbsp. chopped onion

1 lb. shrimp, shelled, deveined ,and cooked

Add all ingredients except shrimp to a food processor.

Process until well mixed. Drop shrimp in and process until either pureed or chopped to desired consistency.

Serve on Oatmeal Crackers as an appetizer.

Yield: about 4 cups
