Sherry Walnuts

These Sherry Walnuts are delicious with a cup of coffee served after dinner!

1 1/2 cups sugar

1/2 cup sherry

pinch of salt

1/2 tsp. cinnamon

3 cups walnut halves

Lightly oil a baking sheet.

Mix the sugar, sherry and salt together in a 3 quart saucepan.

Stir over low heat until the sugar has dissolved, bring to a boil, cover and let boil for 2-3 minutes.

Uncover and wash down the sides of the pan with a pastry brush dipped in cold water.

Cook without stirring to soft ball stage (236 degrees) on a candy thermometer.

Remove from heat, stir in the cinnamon and walnuts and stir vigorously until the mixture looks cloudy.

Turn onto the prepared baking sheet and separate the walnuts with two forks.

Let cool. Store in a tin at room temperature.

Makes about 4 cups
