5 Tbsp. extra virgin olive oil

2 sweet fennel Italian sausage links

2 spicy Italian sausage links

2 medium yellow onions, peeled and spiralized

1 red bell pepper, spiralized

1 orange bell pepper, spiralized

1 1/2 Tbsp. tomato paste

1/4 tsp. red pepper flakes

4 cloves garlic, minced

1/2 tsp. dried oregano

1 cup low sodium chicken broth

salt & pepper to taste

2 Tbsp. finely chopped fresh curly parsley

2 medium zucchini, spiralized

Heat 2 tablespoons of oil in a large skillet with a lid over medium high heat. When the oil is shimmering, add the sausages and cover the pan. Cook about 7 minutes or until browned on the bottom. Uncover and cook 5 minutes more, turning until browned on the outside but not cooked through. Using tongs, transfer the sausage to a cutting board. Slice into 1 inch pieces. Set aside.

Immediately add the remaining 3 tablespoons of oil, the onion noodles, bell pepper noodles to the same skillet. Cook about 5 minutes or until the vegetables soften.  Add tomato paste and stir to cook the vegetables. Add red pepper flakes and garlic. Cook another 30 seconds or until fragrant. Return sausage to skillet and add oregano and chicken broth. Season with salt and pepper. Cover the skillet and simmer about 10 minutes or until sausages are cooked through. Uncover and simmer until the sauce has reduced by a quarter. Stir in parsley.

Transfer to a large serving platter or bowl and add the zucchini noodles. Toss completely until the noodles begin to wilt and are fully mixed in. Serve immediately with Sun-Dried Focaccia Bread if desired.
