Salted Caramel Chocolate Chip Cheesecake

This Salted Caramel Chocolate Chip Cheesecake is a delightful dessert for any occasion, plus it is simple to prepare!

Caramel Sauce:

1 cup granulated sugar

6 Tbsp. salted butter, cut into 6 pieces

1/2 cup heavy cream

Crust:

1 cup Oreo cookies, finely crushed

3 Tbsp. unsalted butter, melted

Cheesecake:

3 8 oz. packages cream cheese, at room temperature

1 14 oz. can sweetened condensed milk

3 large eggs, at room temperature

2 tsp. vanilla extract

1 cup mini chocolate chips + more for topping

sea salt, optional topping

To prepare Caramel sauce: In a small saucepan, heat sugar over medium heat, stirring constantly until it starts to melt and form brown clumps. Continue to stir until the sugar is melted.

Add butter and stir until completely melted. Continue to stir while you slowly pour in the heavy cream. Boil mixture for 1 minute and remove from heat. Immediately stir in the salt. Set sauce aside and allow to cool before using. Refrigerate until needed.

To prepare Crust: Preheat oven to 300 degrees. Grease a 9 inch springform pan and set aside.

Combine the crushed Oreo’s and butter in a mixing bowl. Press mixture into the springform pan.

To prepare the Cheesecake: Place cream cheese in a stand mixer. Beat the cream cheese until fluffy, about 2-3 minutes. Beat in the condensed milk. Beat in eggs one at a time until thoroughly mixed. Add the vanilla and mix in. Add chocolate chips and fold in gently with a spatula. Pour into the mixture into the the prepared pan. Top with about a handful of mini chocolate chips.

Bake for 40-50 minutes or until the cheesecake is set and jiggles slightly in the center. Run a thin knife around the edge of the cheesecake, leave in pan and place on a cooling rack to cool.

Refrigerate overnight.

Before serving, heat caramel sauce in the microwave for 10-15 seconds. Remove the springform pan from the cheesecake. Pour enough of the caramel sauce over the top to the cheesecake to cover it. Top with more chocolate chips and a sprinkle of sea salt, if desired. Slice and serve immediately.
