Rosemary Roast Chicken

This Rosemary Roast chicken is simple and delicious! Add some new red potatoes and baby carrots around the chicken for a complete meal.

4 lb. roasting chicken

1 tsp. salt

1/4 tsp. pepper

1 onion, quartered

8 cloves garlic, pressed

1/4 cup fresh rosemary, chopped

1/4 cup butter, melted

Place chicken in a large greased roasting pan. Sprinkle with salt & pepper.

Place onion, garlic and rosemary inside the chicken, brush butter all over chicken.

Bake, uncovered, at 400 degrees for 1 1/2 hours, basting with pan juices until golden and juices run clear when chicken is pierced with a fork.

Serves 4-6
