Roasted Asparagus with Feta

Roasted Asparagus with Feta makes a savory side to serve with almost any entree.

1 bunch asparagus, trimmed

1-2 tsp. olive oil

coarse salt to taste

2 tomatoes, chopped

8 oz. package crumbled feta cheese

Arrange asparagus spears in a lightly greased 2 quart baking dish.

Sprinkle with olive oil and add salt to taste.

Bake at 400 degrees for 15-20 minutes or until tender, let cool.

Chop asparagus into 2 inch pieces and toss with tomatoes and feta cheese.

Serves 4

Variation: Add freshly chopped basil, garlic and bow tie pasta
