Rio Grande Green Pork Chili

This Rio Grande Green Pork Chili is great served with warm flour tortillas or served over burritos.

3 lbs. boneless pork loin, cubed

1 clove garlic, minced

3 Tbsp. olive oil

1/2 cup flour

2 14.5 oz. can beef broth or homemade stock recipe here

32 oz. can tomato juice

14.5 oz. can crushed tomatoes

7 oz. can diced green chilies

4 oz. can chopped jalapeno peppers

1/3 cup dried parsley

1/4 cup lemon juice

2 tsp. ground cumin

1 tsp. sugar

1/4 tsp. ground cloves

In a heavy skillet over medium heat, saute pork and garlic in oil. Add flour, stirring until thoroughly combined.

Place browned pork in a 6 quart slow cooker. Add remaining ingredients, cover an cook on low for 6-8 hours, until pork is tender.
