Red Velvet Ice Cream Sandwiches

Serve these yummy Red Velvet Ice Cream Sandwiches with your Fourth of July celebration, they will be a big hit!

2 cups cake flour

2 Tbsp. unsweetened cocoa powder

1 tsp. baking soda

1 tsp. kosher salt

2 cups sugar

1 cup vegetable oil

2 large eggs

1 cup buttermilk, at room temperature

2 tsp. pure vanilla extract

1 tsp. distilled white vinegar

red liquid food coloring

3 1/2 cups ice cream

Heat oven to 325 degrees. Lightly coat small tart pans with removable bottoms with cooking spray and place on a baking sheet.

In a medium bowl, whisk together flour, cocoa, baking soda and salt.

In a large bowl, combine sugar and oil. Add eggs, buttermilk, vanilla, vinegar and food coloring. Add flour mixture a little bit at a time, mixing just until combined.

Spoon batter into prepared pans, filling each about 2/3 full. Bake 20-25 minutes or until a wooden pick inserted into the center comes out clean. Let cool for 10 minutes, then remove cakes from the pans and transfer to a wire rack to cool completely. Repeat with remaining batter.

When cool and ready to serve, form sandwiches with two cakes and 1/2 cup ice cream.
