This is a southern French dish that is just delicious!

1 onion, chopped

3-4 cloves garlic, chopped

3-4 Tbsp. olive oil

2 zucchini, sliced

2 eggplants, peeled and cubed

2 green peppers, sliced

28 oz. can crushed tomatoes

1 tsp. dried parsley

1 tsp. dried oregano

1 tsp. dried basil

4 cups hot cooked rice

Saute onion and garlic in oil in a large skillet over medium heat.

Add remaining ingredients, except rice, simmer over medium heat for 30 minutes or until vegetables are tender.

Serve over cooked rice. Add Baked Garlic Butter Chicken for a delicious complete meal.
