Raisin Whole Wheat Quick Bread

Give this delicious Raisin Whole Wheat Quick Bread recipe a try. You will want to make it again and again!

5 cups whole wheat flour

1 cup wheat germ

1 cup packed brown sugar

2 1/2 tsp. baking powder

1 tsp. salt

1/4 tsp. cinnamon

3 cups milk

1 1/2 cups butter, melted

1/4 cup honey

3 cups grated carrots

1 15 oz. package golden raisins

1 cup chopped dates

1/2 cup chopped almonds

1/2 cup chopped pecans

In a large bowl combine the first 6 ingredients.

In another bowl whisk milk, butter and honey. Stir into dry ingredients just until moistened.

Fold in carrots, raisins, date, almonds and pecans.

Transfer to three greased 8 x 4 inch loaf pans.

Bake at 350 degrees for 60-70 minutes or until a toothpick inserted neat the center comes out clean.

Cool 10 minutes in pan, remove from pans and cool on wire rack.

Yields 3 loaves, 12 slices each
