Pound Cake

Everyone likes Pound Cake, and this old fashioned pound cake recipe delivers. Serve with fresh fruit, ice cream or a favorite sauce.

1 cup butter

1 2/3 cups sugar

5 eggs

2 cups cake flour

1/2 tsp. salt

1 tsp. vanilla or 1/2 tsp. mace

Preheat oven to 325 degrees. Butter and lightly flour a 9 x 5 inch loaf pan. Set aside.

Cream butter and slowly add sugar, beat until light and fluffy.

Add eggs, one at a time, beating well after each addition.

Stir in flour, salt and vanilla or mace, and combine well.

Spoon into the prepared pan and bake for 1 1/4 to 1 1/2 hours, or until a toothpick inserted near center comes out clean.

Cool in pan for 5 minutes before turning out onto a wire rack.

Serve very thin slices.

Yields: 1 loaf
