Potatoes O’ Brien

Potatoes O’Brien is a great recipe to prepare and freeze for later use. Give this quick and easy recipe a try!

6 large russet potatoes

1 large green bell pepper, chopped into 1/2 inch pieces

1 large red bell pepper, chopped into 1/2 inch pieces

1 large onion, chopped into 1/2 inch pieces

1/4 cup vegetable oil

Place potatoes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce to medium-low heat. Cover and simmer 10 minutes. Drain and set aside to cool.

Once cool, dice into 1/2 inch pieces.

Combine potatoes, green, red peppers and onion in a mixing bowl.

Drizzle with vegetable oil and gently stir until evenly coated.

Spoon the mixture into resealable freezer bags. Store in freezer.

To prepare, cook the frozen mixture in a nonstick skillet over medium-high heat, season with your choice of spices.

Cook until crispy and golden brown, stirring occasionally, about 20 minutes. Serve warm.
