Portuguese Sweet Potato & Coconut Cake

Try this delicious Portuguese Sweet Potato & Coconut Cake recipe for a different dessert!

1 lb. sweet potato puree

3 medium eggs

5 Tbsp. butter, softened

1 1/4 cups flour

1 1/4 cups sugar

3/4 cup coconut milk

3/4 cup grated coconut

1 Tbsp. vanilla extract

1 Tbsp. baking powder

In a blender, beat egg yolks, butter, sugar and coconut milk until mixture is smooth.

Pour mixture into a large bowl and add vanilla, sweet potato puree, grated coconut, flour and stir with a wire whisk until well mixed.

Beat the egg whites and gently add to the batter.

Add the baking powder and mix well.

Grease a 9 inch round cake pan and sprinkle with flour. Pour batter into the pan.

Bake in a 350 degree oven for about 40 minutes or until golden brown.

Remove the cake from oven, let cool and remove from pan.

Serves 8
