Perfect Pecan Pie

This Pecan Pie is simple and tastes just perfect!

1 recipe for Flaky Pie Crust

3 eggs, beaten

1/2 cup sugar

1/4 tsp. salt

3 Tbsp. butter, melted

1 cup dark corn syrup

1 tsp. vanilla extract

2 cups pecan halves

vanilla ice cream, optional

Whisk together eggs and next 5 ingredients until thoroughly blended. Stir in pecans.

Fit pie crust into a 9 inch pie plate. Fold edges under and crimp.

Pour filling into pie crust.

Bake at 350 degrees on lower rack of oven for 40 minutes or until pie is set, covering edges with aluminum foil after 15 minutes.

Cool completely on a wire rack.

Serve with vanilla ice cream if desired.

Serves 6

Variation: Try walnut halves in place of pecans
