Pecan Pie Bars

Pecan Pie Bars with a vanilla shortbread crust, pecans and brown sugar make this a very sweet treat your family will love.

Crust:

1 1/4 cup unsalted butter, room temperature

6 Tbsp. granulated sugar

2 large eggs

1 1/2 tsp. pure vanilla extract

2 1/4 cups all-purpose flour

1/4 tsp. baking powder

1/8 tsp. kosher salt

Topping:

2 sticks unsalted butter

1/2 cup light corn syrup

1 1/2 cups light brown sugar, packed

2 Tbsp. heavy cream

16 oz. pecans, chopped

Preheat oven to 350 degrees.

To prepare the crust: Beat butter and granulated sugar with electric mixer, until light and fluffy. Add eggs and vanilla, mix well.

Sift together flour, baking powder and salt. Mix dry ingredients into the mixer batter on low speed, just to combine.

Press dough evenly into an ungreased 9 x 13 inch baking pan, making an edge about 1/4 up the sides of pan. The dough will be sticky, sprinkle your hands with flour if needed.

Bake 15 minutes until crust is set but not browned. Allow to cool.

To prepare topping: Combine the butter, corn syrup and brown sugar in a large, heavy bottomed saucepan. Cook over low heat until butter is melted. using a wooden spoon to stir.

Turn heat to medium-high and boil for 3 minutes. Remove from heat.

Stir in heavy cream and pecans.

Pour over crust, trying to keep filling on crust so it doesn’t run under crust.

Bake 25-30 minutes, until filling is set.

Remove from the oven and allow to cool.

Wrap in plastic and refrigerate until cold. Cut into bars and serve.
