Pasta with Tuna & Olives

This Pasta with Tuna & Olives is a simple clean eating meal. Tuna and olives make a complete meal out of pasta and marinara sauce!

16 oz. spelt or Kamut pasta noodles, or gluten free noodles of choice

1 Tbsp. extra virgin olive oil

3 cloves garlic, passed through a garlic press

1 medium onion, peeled and chopped

2 stalks celery, trimmed and chopped

1 small carrot, peeled and chopped

1/4 tsp. red pepper flakes

1 28 oz. can tomato puree

sea salt and fresh ground black pepper

2 Tbsp. fresh chopped basil

2 Tbsp. fresh chopped oregano

8 oz. albacore tuna, water packed

1/2 cup black, pitted Kalamata olives

Bring 8 cups water to a boil in a large sauce pan. Put a little olive oil and sea salt into the boiling water. Drop the pasta noodles in the water and cook al dente.

Place the olive oil in a Dutch oven and heat over medium heat. Add garlic, onions, celery, carrots and red pepper flakes. Saute for 10 minutes or until vegetables are soft. Add tomato puree, sea salt, fresh ground black pepper and herbs. Add drained tuna and black olives. Let mixture heat through on low for 10 minutes. Serve over pasta.
