Old Fashioned Potato Biscuits

These Old-Fashioned Potato Biscuits are light, moist and golden, plus they taste great!

1/2 cup hot milk

2 Tbsp. shortening

2 Tbsp. sugar

1/2 cup warm mashed potatoes

1 tsp. salt

3 1/4 cups white flour

1 package dry yeast

1/4 cup warm water

Mix the hot milk, shortening, sugar, potatoes, salt and 1/4 cup of flour in a large bowl and let cool to lukewarm.

Stir the yeast into the warm water and let it stand for 5 minutes to dissolve.

Add the dissolved yeast to the first mixture and beat vigorously.

Cover and let rise in a warm place until light.

Stir, add the remaining 3 cups of flour and mix well.

Cover and let rise again to double in size.

Turn out onto a lightly floured board. Pat the dough until it is 1/4 inch thick and cut into 2 inch rounds.

Place the rounds about one inch apart on a greased baking sheet, cover and let rise until almost double.

Preheat oven to 425 degrees.

Bake biscuits for 15 minutes. Serve warm with Chia Seed Strawberry Jam.
