Old Fashioned Oatmeal Cake

This Old Fashioned Oatmeal Cake is a great dessert to bring to parties, family get together’s. It can be made a day or two in advance!

1 cup rolled oats

1/2 cup butter

1 1/2 cups boiling water

2 eggs

1 cup brown sugar

1 cup granulated sugar

1 1/3 cups all-purpose flour

1 tsp. cinnamon

1 tsp. baking soda

1/2 tsp. nutmeg

1/2 tsp. salt

Topping:

6 Tbsp. butter, room temperature

1 cup sweetened shredded coconut

1/2 cup evaporated milk

1/2 cup brown sugar

1 cup chopped nuts of choice

1 tsp. vanilla extract

Preheat oven to 350 degrees. Grease a 9 x 13 inch baking pan with nonstick cooking spray.

Add oatmeal and butter to a bowl and pour boiling water on top. Set aside.

In a mixing bowl combine eggs, brown sugar and granulated sugar and beat well.

In a separate bowl, sift together flour, cinnamon, baking soda, nutmeg and salt. Add to to mixing bowl and stir to combine. Add in the oatmeal mixture and stir well to combine.

Pour batter into prepared baking pan.

Bake 35 minutes or until a toothpick inserted near center comes out clean.

While the cake is baking, make topping by combining all ingredients in a bowl.

Remove cake from oven and turn oven to high broil.

Spread the topping evenly over the warm cake and place under broiler for 2-3 minutes or until coconut is golden brown.
