Moist Banana Cake

Make this Moist Banana Cake with frosting for a delicious dessert that can’t be beat!

1 1/3 cup mashed bananas

2 1/2 Tbsp. lemon juice, divided

1 1/2 cup milk

3 cups flour

1/2 Tbsp. baking soda

1/4 tsp. salt

2/3 cup butter, softened

1 cup granulated sugar

1 cup brown sugar

3 large eggs

1 tsp. vanilla

Frosting:

8 oz. cream cheese

1/3 cup butter, softened

1 tsp. lemon juice

1 1/2 tsp. lemon zest

3 to 3 1/2 cups powdered sugar

Preheat oven to 300 degrees. Grease and flour a 9 x 13 inch baking pan.

Place 1 1/2 Tbsp. lemon juice in a 2 cup measuring cup. Top off to 1-1/2 cups with milk and set aside.

Mix banana with 1 Tbsp. lemon juice and set aside. Beat butter, brown sugar, granulated sugar until combined. Stir in eggs and vanilla.

Combine flour, baking soda and salt in a medium bowl. Alternate adding flour mixture and milk to egg mixture, stirring just until combined. Fold in bananas.

Pour into prepared baking pan. Bake in a 300 degree oven for 60- 70 minutes or until a toothpick inserted near center comes out clean. Do not over bake.

Remove from oven and cool completely.

To prepare Frosting: Cream together butter and cream cheese until fluffy. Add lemon zest and juice. Add powdered sugar a little at a time until you reach desired consistency.

Spread over cooled cake.
