Mexican Chicken Casserole

Mexican Chicken Casserole is a delicious meal for dinner, it has a bit of zing to it, making it full of flavor!

4 boneless, skinless chicken breasts, cooked and shredded

2 10.75 oz. cans cream of chicken soup or homemade recipe here

1 10.5 oz. can diced tomatoes with green chilies

1 tsp. pepper

1 Tbsp. cilantro, chopped

2 cloves garlic, pressed

1 tsp. onion powder

1 tsp. cayenne pepper

8 oz, package Velveeta, cubed

2 cups spicy nacho flavored tortilla chips, crushed

Garnish: sour cream, sliced jalapenos, shredded lettuce, diced tomatoes.

Combine all ingredients except tortilla chips and garnish.

Mix well and pour into a lightly greased 13 x 9 inch baking pan.

Bake, uncovered, at 425 degrees for 20 minutes, or until bubbly.

Stir well and top with crushed tortilla chips to cover.

Bake uncovered for an additional 10 minutes.

Let stand for 5 minutes before serving. Garnish as desired.
