Mexicali Rice

Mexicali Rice is made in your slow cooker, it is a healthier recipe which you could add chicken or turkey breasts to make a complete healthy meal.

1 15 oz. can corn, drained

1 15 oz. can black beans, drained and rinsed

1 4 oz. can diced green chilies

1 onion, chopped

1 red pepper, chopped

2 cups long-cooking rice, uncooked

3 1/2 cups boiling water

1/2 cup frozen orange juice concentrate, thawed

4 1/2 Tbsp. lime juice, divided

1 1/2 Tbsp. ground cumin

1 Tbsp. chili powder

1/3 cup fresh cilantro, chopped

1/2 tsp. salt

Combine corn, black beans, chilies, onion, pepper, rice, water, orange juice, 1/4 cup lime juice, cumin and chili powder in a 3 quart slow cooker.

Cover and cook on low for 2 1/2 to 3 hours.

Stir in remaining lime juice, cilantro and salt, mix well.

Serves 4-6
