Loaded Potato Quiche

Loaded Potato Quiche makes a quick and delightful meal to serve for a light dinner meal!

Crust:

2 1/2 cups biscuit mix

6 Tbsp. cold butter

1/4 cup boiling water

Filling:

1 1/2 cups chopped cooked ham

1 1/2 cups diced frozen hash browns, thawed

1 1/2 cups shredded sharp cheddar cheese

3 medium green onions, sliced into 3 Tbsp.

5 eggs

3/4 cup half-and-half

1 tsp. freshly ground pepper

3 slices bacon, crisply cooked and crumbled

sour cream and additional sliced onions if desired

Heat oven to 350 degrees. Spray a 9 1/2 inch deep dish pie plate with cooking spray.

Place biscuit mix in a medium bowl. Cut in butter until crumbly. Add boiling water, stir vigorously until soft dough forms.

Using fingers dipped in biscuit mix, press dough on bottom and up side of pie plate, forming edge on rim of plate. Sprinkle ham, potatoes, cheese and 3 Tbsp. onions in crust. In medium bowl, beat eggs, half-and-half and pepper until blended.

Pour over ingredients in crust.

Bake 1 hour or until a knife inserted comes out clean.

Let stand 15 minutes before serving. Top with bacon, sour cream and additional onions.
