Loaded Baked Potato Salad

This Loaded Baked Potato Soup is a simple side dish for any meal, but is great for a family barbecue!

5 lbs. medium russet potatoes

1 cup sour cream

1/2 cup mayonnaise

1 package bacon, cooked and crumbled

1 small onion, chopped

chives to taste

1 1/2 cups shredded cheddar cheese

salt and pepper to taste

Wash potatoes and poke hole in them with a fork.

Bake at 350 degrees for about an hour or fork tender. Cool and cut potatoes into bite sized chunks.

Leave the skin on to get the nutrients and a prettier salad. Place potatoes in a large bowl and refrigerate until fully chilled.

Mix mayonnaise and sour cream together in a bowl. Add to potatoes. Add onions, chives, bacon and cheese. (reserve some for topping salad). Salt and pepper to taste.

Top with extra shredded cheese, bacon and chives. Serve.
