Lemon Slice Cookies

These Lemon Slice Cookies make a great gift for any occasion!

1 cup butter, softened

1 cup brown sugar, packed

1/2 cup sugar

1 egg

1 Tbsp. lemon zest

2 Tbsp. lemon juice

2 cups all-purpose flour

1/4 tsp. baking soda

1/2 tsp. salt

Beat butter and sugars until light and fluffy, blend in egg, lemon zest and lemon juice.

Combine flour, baking soda and salt, add to butter mixture and mix just until blended.

Divide dough in half, with floured hands, shape each half into a 10 inch log.

Wrap each log in plastic wrap, refrigerate until firm.

Cut each roll into 1/4 inch thick slices.

Arrange on greased baking sheets.

Bake at 400 degrees for 8-10 minutes, cool on a wire rack.

Makes about 3 dozen
