Lemon Marinated Herb Pasta Salad

Try this refreshing Lemon Marinated Herb Pasta Salad with your Fourth of July celebration.

12 oz. rotini

3 Tbsp. olive oil

1 Tbsp. lemon zest

2 Tbsp. lemon juice from 1 large lemon

kosher salt & pepper

8 cups spinach, thick stems removed

1/2 cup basil, torn

1/3 cup dill

1/3 cup chives, cut in 2 inch pieces

1/4 cup tarragon

1 cup Parmesan cheese, shaved

Cook pasta according to package directions, rinse under cold water to cool, then drain well.

Meanwhile, in a large bowl, whisk together oil, lemon zest, lemon juice and 1 teaspoon each salt and pepper. Toss with pasta and refrigerate until ready to serve, up to overnight.

When ready to serve, toss with spinach, herbs and half of the Parmesan. Serve with remaining Parmesan. Try serving with Lemony Grilled Chicken, if desired.
