Use jams of various colors to fill the centers of these crisp, chewy Jubilees for a festive look.

1/2 cup butter

1 cup sugar

2 eggs

1 tsp. vanilla

1 1/2 cups flour

1 tsp. baking powder

1/4 tsp. baking soda

1/2 tsp. salt

2 cups cornflakes, slightly crumbled

assorted jam or jelly

Preheat oven to 350 degrees. Grease baking sheets and set aside.

Cream butter and add sugar, gradually and combine well.

Add eggs and vanilla, mix well.

Mix together flour, baking powder, baking soda and salt.

Add to creamed mixture and combine well.

Chill until firm enough to handle.

Shape with your fingers into 1 inch balls.

Roll in cornflakes and place 2 inches apart on prepared baking sheets.

Indent each in center with your finger.

Fill with a little jam or jelly.

Bake 15-20 minutes or until firm.

Cool on baking sheets before removing to wire racks.

Yield: about 40 cookies
