Italian Chicken Pasta in Creamy Parmesan Sauce

This Italian Chicken Pasta in Creamy Parmesan Sauce will be your new favorite Italian dish to serve!


4 boneless skinless chicken breasts

1/2 cup flour

1 tsp. salt

1/4 tsp. black pepper

1 tsp. garlic powder

2  tsp. Italian seasoning

2 Tbsp. olive oil


12 oz. spaghetti

Parmesan Sauce:

4 Tbsp. butter

1 small yellow onion, chopped

4 cloves garlic, minced

2 scallions, chopped

2 small tomatoes, diced

1 Tbsp. flour

1 cup heavy cream

1 cup white wine

1/2 cup shredded Parmesan cheese

1 tsp. Italian seasoning

1/2 tsp. salt, more to taste

1/4 tsp. crushed red pepper flakes

To prepare the Chicken: Cut chicken breasts in half horizontally. Dry with paper towel.

In a large bowl, combine flour, salt, black pepper, garlic powder and Italian seasoning. Stir well to blend. Using a fork or tongs, coat the chicken in the flour mixture. Set aside.

Heat 2 tablespoons olive oil in a large skillet over medium high heat. Once the skillet is hot, place flour coated chicken breasts in the skillet and cook for 4-5 minutes on each side until golden brown and cooked through, about 8-10 minutes. Remove chicken from pan and set aside.

To prepare Parmesan Sauce: Add butter, onion and garlic to skillet. Cook on medium high until onions are translucent. Add the chopped scallions and tomatoes. Add 1 tablespoon flour and whisk to combine.

Now add the heavy cream, wine, Italian seasoning, salt and red pepper flakes. Bring mixture to a simmer and add 1/2 cup Parmesan cheese. Use a whisk or wooden spoon and mix until smooth.

Cook spaghetti according to package directions, drain.

To assemble, add the cooked pasta to the skillet with the sauce and stir to combine over low heat for 2-4 minutes. Taste and adjust seasonings, if needed. Return chicken to the skillet on top of the pasta and allow to warm for about 5 minutes.

Serve chicken either on top or next to pasta. Sprinkle with Parmesan cheese, if desired. Add Sesame Green Beans for a delicious meal.
