Irish Potato Candy

Try this old school Irish Potato Candy for a wonderful treat!

1/4 cup butter, softened

4 oz. cream cheese

1 tsp. vanilla extract

4 cups powdered sugar

2 1/2 cups flaked coconut

1 Tbsp. ground cinnamon

In a medium bowl, beat the butter and cream cheese until smooth. Add vanilla and powdered sugar, beat until smooth.

Use your hands if necessary, mix in coconut. Roll into balls or potato shapes and roll in cinnamon.

Place on a parchment lined baking sheet and chill to set. If desired roll in cinnamon again for a darker color.
