Hearty Sausage ‘N’ Beans

This Hearty Sausage ‘N’ Beans make a quick one dish meal, and tastes great!

1 lb. smoked sausage, sliced

1 medium onion, chopped

2 Tbsp. canola oil

2 15 oz. cans pinto beans, rinsed and drained

1 1/2 cups water

1 14.5 oz. can diced tomatoes with green chilies

1 Tbsp. ranch salad dressing mix

2 cups uncooked instant rice

In a Dutch oven, cook sausage and onion in oil over medium heat until onion is tender.

Add beans, water, tomatoes and salad dressing mix. Bring to a boil, stir in rice.

Reduce heat, cover and simmer 5 minutes or until rice tender.

Serve with Jalapeno Bacon Cornbread or Creamed Spinach Casserole if desired.
