Hamburger Casserole

This Hamburger Casserole is easy to make and tastes great, it would make a wonderful weeknight meal to put together quickly.

4 cups egg noodles, cooked

1 lb. lean ground beef

1 cup diced onion

1 cup diced green pepper

1 tsp. garlic powder

1 tsp. Italian seasoning

8 oz. can tomato sauce

14 oz. can diced Italian style tomatoes

1/2 cup frozen peas and carrots

1/4 cup frozen corn

2 cups shredded cheddar jack cheese, divided

salt & pepper to taste

Prepare egg noodles according to package directions and set aside.

Preheat oven to 375 degrees. Spray a 13 x 9 inch baking pan with cooking spray.

In a medium skillet, cook the ground beef, stirring to break up until almost done.

Add onion and green pepper and cook about 4 minutes. Add garlic and Italian seasoning and cook 1 minute more.

Pour tomato sauce and diced tomatoes into the skillet and cook, stirring for a few more minutes.

Place the egg noodles in the bottom of the baking pan. Pour the ground beef mixture over the top. Add the peas, carrots, corn and half of the cheese. Mix all together.

Top with remaining cheese and bake 25 minutes or until cheese is melted and the casserole is heated through.

Serve warm, with Braided Onion Potato Bread, if desired.
