Ham & Cheese Tortellini

Ham & Cheese Tortellini is a tasty spring time pasta recipe your family will love!

1 Tbsp. extra-virgin olive oil

1 shallot, minced

3 cloves garlic, minced

1/2 lb. deli ham, chopped

fresh ground black pepper

1 1/2 lbs. cheese tortellini

2 cups frozen peas

3/4 cup low sodium chicken broth

1/3 cup heavy cream

1 cup shredded Swiss cheese

1/2 cup freshly grated Parmesan cheese

fresh chopped parsley, for garnish

In a large skillet over medium-heat, heat oil. Add shallot and garlic, cook until soft. Add ham and cook until crisp, stirring occasionally. Season with pepper. Add tortellini and frozen peas and stir until coated.

Pour chicken broth into skillet and simmer until tortellini is al dente. Add heavy cream, Swiss and Parmesan. Stir until creamy.

Garnish with parsley and serve.
